La Cour d’Armoise Chicken, bred by Pascal Cosnet, is a favourite of France’s top Michelin-starred restaurants. These slow-growing, old-breed chickens roam freely on over 6 hectares of grassland, enjoying a unique diet of farm-grown cereals enhanced with essential oils and more than 25 wild plants, resulting in meat with an exceptional, distinctive flavour.
The chickens’ natural lifestyle and special diet, including plants like dandelion and nettle, contribute to their superior taste and texture. A unique refinement process before slaughter, involving a blend of five special plants and whole cow’s milk for hens, ensures perfectly distributed fat and remarkably flavourful meat.
For best results: Roast whole in the oven with herbs and garlic, basting regularly to enhance its natural flavours. Serve with roasted vegetables and a light jus made from the cooking juices for a simple yet elegant meal that showcases the chicken’s exceptional quality.

Preparation: All of our poultry is expertly prepared in-house. We process each bird on the day it arrives from France, ensuring maximum freshness. Using traditional trussing techniques, we carefully bind the birds into the ideal shape for oven roasting. This method closes any cavities, promoting even cooking throughout. Please note that these birds are oven-ready and do not include giblets, making them convenient for immediate use in your kitchen.
Frozen Poultry: For optimum freshness, we prepare our poultry immediately upon arrival from our suppliers. Each bird is carefully wrapped and rapidly frozen to -30°C using a blast freezer. This advanced quick-freezing method prevents the formation of ice crystals within the meat, ensuring the bird remains in perfect condition when defrosted. As a result, you can expect exceptional quality and cooking results, preserving the premium taste and texture of our Poultry.
